3-501.16(A)(1) Maintain TCS foods in hot holding at 135F or above. -P- Observed hamburger patties and hot dogs in hot box at 118F-121F. They had not been assembled yet and shall be maintained at 135F and above. The hot box was set to 138F, recommended to manager they set it to ~160F. They did so during inspection. |

Observed plastic container of clean utensils with food debris inside of it. Clean utensils shall be stored in a clean and protected manner. |

4-501.11 Maintain equipment in good repair - Observed broken glass inside oven, manager stated they were currently not using oven. Have oven repaired, replaced, or removed. Handle to slide door to metal cabinet where clean pans are stored is broken. The manager stated the hot holding cabinet with the green digital reading was always much hotter then what it was set on. During the inspection it was set to 135F and the food inside was 160F-170F. Have hot box repaired so that it's the same temperature as what it's set to. Equipment shall be maintained in good repair. |
