Per little Caesar time control procedure there should be a timer on the speed rack to keep track of how long the pizzas have been sitting out. Allowed manager to put sticker on speed rack to keep track of the time. I will return in 3 days to verify the timer is available and working properly. There was no date stamp on the container of pizza sauce cups sitting out at room temperature. Sauce can be held at room temperature for 12 hours and container shall have date sticker on it once removed from refrigeration and discarded after 12 hours. Allowed manager to put sticker on container during inspection.
