Observed cut head of lettuce in prep cooler top at 52F. Recommend cutting the lettuce prior to putting at the top of the prep cooler instead of taking the cut head of lettuce out and cutting it each time it's needed. Ensure cheese is being put back into prep cooler once it's done being used. Cold held TCS foods shall be maintained at 41F and below. All were discarded during the inspection. |

Owner stated they were opened this past Saturday (2 days prior). All were discarded during the inspection. Ready to eat TCS food shall be dated if not used within 24 hours of opening.

They stated the slaw was from last week but could not provide a exact date. The date sticker was also not legible. Ensure ready to eat TCS foods are being used for a maximum of 7 days. |

Top lid to prep cooler will not stay up and small chopsticks are being used to hold the lid up. Flooring in walk-in freezer is warped. Observed heavy ice build-up along the piping and backside of walk-in freezer unit. Equipment shall be maintained in good repair. |
