3-304.11 Food Contact with Equipment, Utensils, and Linens (P) - Observed a washed and 1/2 cut watermelon partially wrapped where the shell was not covered and in contact with a sheet pan in the walk-in. The employee stated the sheet pan does not get cleaned and sanitized daily. Ensure the watermelon is being fulled wrapped once washed and cut before coming into contact with the sheet pans. Employee fully wrapped the watermelon during the inspection. |
