Observed cooked barbacoa and ground beef at bottom of prep cooler that were not dated. Observed pico and diced tomatoes in walk-in cooler that were not dated. All had been opened >24 hours prior. Ready to eat TCS food shall be dated if not used within 24 hours of opening. |

Observed cockroaches crawling on walling and knife magnet where clean knives were stored. Knives were removed and put at 3 compartment sink. Owner stated they would remove knife magnet and replace it.

6-501.11 Repairing - Premises, Structures, Attachments, and Fixtures - Methods (C) - Flooring and coving behind cooking equipment in kitchen has holes in it in several areas exposing raw concrete. Some spots were patched with concrete. If you patch with concrete it shall be sealed due to concrete being absorbent. Caulk along top and bottom of boards on walling in establishment to elimate areas where pests can hide. Physical facilities shall be maintained in good repair.
