Sliced cheese was overfilled at the top of the grill prep cooler and ranged from 41F-48F, cheese above fill line were discarded. Cold held TCS food shall be maintained at 41F and below. Do not put TCS food at bottom of grill prep cooler unless unit is repaired and holding food at 41F and below.
