After 30 minutes the lettuce was still 51F. The lids on all the containers were vented and after 30 minutes the lettuce cooled from 51F to 47F. Ensure rapid cooling methods are being used to achieve proper cooling times and temperatures.

Manager stated the employee rinsed the spindle used to mix the milkshake with the sanitizer after each use. REHS stated the spindle shall not be sanitized after each use to prevent sanitizer coming into contact with the next milkshake. The employee stated they used a towel to dry the spindle. The spindle can be rinsed after each use with water but shall not be rinsed with sanitizer because it has to be air dried before being used again with another shake, employee shall not towel dry the spindle. Manager understood and replaced sanitizer in cup with water and will change the water out every 4 hours.
