4-501.112 - Mechanical Warewashing Equipment, Hot Water Sanitization Temperatures: Observed the surface temperature of the warewashing machine was below 160F (testing around 137F initially) when measured by a temperature measuring device (dish machine thermometer).
When using a hot water sanitizing machine for warewashing, provide a minimum of 165F rinse water for a stationary rack, single temperature machine or 180F rinse water for all other machines in order to achieve the 160F utensil surface temperature for hot water sanitization. Pf
CDI - The dish machine was ran at least 5 times with the water temperature increasing each time, eventually reaching a temperature of 161F on the dish machine thermometer. The REHS educated the PIC about ensuring dish machine surface temperature tests at least 160F before using the dish machine for sanitizing ware items. |
