3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. Observed temperatures of TCS foods in walk in cooler above 41F. PIC states that proper cold holding temperature were 41F and below this morning during cooler checks. Food delivery was also received and cleaning afterwards and walk in door was left open for duration. Have unit serviced to ensure cold holding temperatures can be maintained. The temperature in kitchen is really warm which could contribute to elevated temperature. Will return to verify temperature of walk in |

Observed large plastic containers of prepped salsa with tight fitting lids. Discuss proper cooling methods with PIC and containers were vented. |
