Smoked sausages were 123.4 F and grits were 130 F. Both pans were wrapped in aluminum foil and stacked in the bottom of the True cooler to cooler. After 70 minutes, smoked sausages were 103 F, and grits were 102 F, for cooling rates of 0.29 F per minute and 0.4 F per minute, respectively. Discussed storing these pans to allow air flow between them, and keeping the pans loosely covered to allow air the penetrate between them and inside of the pans. Cooling foods were moved to the reach-in cooler. Use rapid cooling methods to achieve rapid temperature reduction.
