Clean linen stored in direct line of splash zone by BOH handsink. Install splash guard or move linen to a location that prevents splash from contacting linens.
4-901.11(A) Air dry equipment and utensils after cleaning and sanitizing. Caramel squeeze bottles observed with water droplets within. Air dry equipment; REHS suggest maintaining separated exposing the internal surfaces so water can escape. |
