Food must be to 41F within 4 hours. -P- Observed marinara sauce that had been cooling for ~ 7 hours in small 1 door cooler at 48F. The marinara sauce comes from a shelf stable bag but shall cool to 41F within 4 hours once removed from the bag. Marinara sauce was discarded during inspection. |

3-501.15 Cooling Methods (Pf) - Marinara sauce was cooling in plastic container in small 1 door cooler. Recommend using walk-in cooler for rapid cooling and you can use a larger container to shallow out the marinara inside the container. The shelf stable bags can also be put into walk-in cooler prior to being opened. Ensure rapid cooling methods are being used. |
