4-601.11(A) Equipment food contact surfaces and utensils shall be clean to sight and touch. -Pf. Observed debris in bottom of metal container holding knives blade down, a peeler and scoop with minimal amount of residue, and rust buildup on can opener all stored as clean. CDI- PIC put items in three comp sink to wash, rinse and sanitize. -1.5pts- REPEAT
