3-501.14(A) Quickly cool cooked foods within 2 hours from 135F to 70F; and within a total of 6 hours from 135F to 41F. -P. Observed wings pulled from the walk in to the main kitchen, per employee, 15 min prior to EHS arrival at 57F-60F. Per employee wings were cooked last night and then cooled in the bus tub with the lid on as they were stored in the kitchen. CDI: Wings were temped 45 minutes later after sitting at room temperature and were at 60F-63F. Wings were voluntarily discarded as it was determined they had not cooled properly and were above 41F prior to being pulled from the walk in cooler. REPEAT VIOLATION EHS reminded PIC and staff to cool wings on a sheet pan that is uncovered in the walk in cooler.
