Observed deli ham and patties of raw beef being placed in the prep coolers without pre-chilling in the walk-in cooler. After preparing TCS foods, cool them in the walk-in cooler. Prep units are not approved for cooling TCS foods. PIC moved the patties and the ham to the walk-in cooler to cool down properly. CDI. |
