Chicken wings was observed thawing in the prep sink in standing water. Frozen food should be defrosted in refrigeration, under cold running water, in microwave, or as part of the cooking process. Vacuum sealed fish should be kept frozen and removed from vacuum sealed package prior to its thawing under refrigeration or immediately upon completion of its thawing.

Repair or replaced the damage screen on the back door. Also, repair the door sweep on the bottom left corner to fit the entire door. Outer openings of a FOOD ESTABLISHMENT shall be protected against the entry of insects and rodents by: Filling or closing holes and other gaps along floors, walls, and ceilings; Closed, tight-fitting windows; and Solid, self-closing, tight-fitting doors.

Missing handle on the flip top. freezer missing handle on the flip-top. Additionally, there was standing water in the tall reach-in where protein was being stored, and the double-door reach-in near the prep sinks was not functioning. Observed tape covering the crack covering on the ice machine. Equipment shall be maintained in good repair. Repair or replace the listed items
4-501.12 Cutting Surfaces (C) REPEAT
Cutting boards on the make-line were highly stained and discolored. Surfaces such as cutting blocks and boards that are subject to scratching and scoring shall be resurfaced if they can no longer be effectively cleaned and SANITIZED, or discarded if they are not capable of being resurfaced. Advised using block whitener on the cutting boards. |

Observed stained ceiling tiles in the dining area. The wall behind the steamtable is bulbging out. Opening observed in the wall underneath the second 3-compartment sink and in the mop area and missing outlet cover near the 3-compartment prep sink. Floors, walls, and ceilings including the attachments such as soap and towel dispensers; light fixtures; and heat/ac vents shall be maintained in good repair.

Remove all non-functional equipment from facility such as the ice machine and the tall reachin. The establishment shall maintain a premises which is free of items that are unnecessary to the operation or maintenance of the establishment, such as litter or equipment that is nonfunctional or no longer used . |
