3-304.12 (C ) Store in-use utensils on a clean portion of the food preparation table or cooking equipment. The utensils and storage surface must be cleaned and sanitized every 4 hours. Knives were stored between the prep unit and table in an uncleanable gap. Knives were moved to a magnetic strip during inspection. Points will be deducted on next inspection if knives are stored between the prep unit and table. |
