CDI: Egg rolls and wontons were over-stacked; therefore, PIC relocated top layer to walk-in since in prep unit < 2 hours. EH informed PIC that over-stacked foods do not maintain required food temperature of 41F. Cover on lo mein was vented to allow temperature to decrease. |
