All food contact surfaces shall be cleaned at a frequency to maintain clean. CDI-manager cleaned ice machine. 4-501.114 Manual and Mechanical Warewashing Equipment, Chemical Sanitization - Temperature, pH, Concentration and Hardness (P) Observed a bucket of sanitizer sitting on the floor next to 3 compartment sink with a concentration of chlorine at 200ppm. Chlorine sanitizer shall be maintained at proper strength of 50ppm to safely sanitize. CDI-manager diluted the sanitizer solution.

All self serving units shall be protected from customers with a sneeze guard to prevent contamination. If a sneeze guard can not be obtained the unit shall be made, so it is no longer used for customers to serve themselves.

Observed bowels sitting in the rice, flour, and sugar. In use utensils shall be stored in food so the handle is sticking up to prevent contamination.
