General CommentsTime as a public health control used on TCS foods and all to be discarded by 2PM include popcorn chicken, Garlick French bread, Pepperoni pack, P & J pack, potato pearls and pinto beans. Employee health discussed. It is important to discuss employee health symptom and illness reporting requirements with all food employees. Great teamwork observed among food employees today as J.S. Waters Manager helped with second lunch today. Good handwashing observed among food employees. R and H Produce delivered non TCS foods today. PIC checked products before accepting product. Menu, food service permit, food service equipment, floor plan, phone numbers, emails, water, sewer, etc. remains the same as last school year. Septic system appears to be working correctly. Bleach sanitizer in 3rd vat utensil sink and sanitizer spray bottle tested 50PPM chlorine. Waste pipe attached to 3 vat utensil sink and 2 vat prep sink does not meet NC plumbing code. CDI- PIC is aware the direct waste plumbing at the two and three compartment sinks does not meet NC Plumbing Code. The PIC has been instructed to contact Building Inspections Dept for follow up as a critical violation correction. Observed personal food stored in a kitchen pan stored on top of a box of chili in the walk-in freezer. Store personal food in a labeled bin on bottom shelf. Food equipment in permitted kitchen can not be used for cooking/heating personal food. However, microwave in dining room may be used to cook and/or reheat personal food made at home.
