General CommentsDiscussed whether drain for food preparation sink is direct or indirect. PIC will ask maintenance. If direct, use a bowl, not a colander, when washing produce in 2-compartment food preparation sink. Discussed thawing, although no thawing observed today. During warmer months, include ice when thawing under running water to keep the temperature of the water at 70f or below. Today the cold water temperature coming is at 82f. A/C is out in kitchen today. There is an extremely loud noise in walk-in refrigerator, but temperature currently is at below 41f. PIC states repair person has been called. Educate staff on which test strips are used for which sanitizer. Both chlorine and quats strips provided. Dishmachine is chlorine and sink/bottles is quats. Discussed how to sanitize stem-type thermometer. No use of it observed today, but options for sanitizing were discussed.
