4-501.114 - No chemical sanitizer hooked up to dishmachine - switched to disposables except for build-up utensils. EHS gave employee guidance on making sanitizer and how to sanitize utensils. Build-up utensils put in sanitize sink with bleach and water to sanitize. PIC states machine does not work properly. I asked if machine has been primed - yes, they have tried that in the past. Bucket of chlorine sanitizer used to prop open storage room door. EHS had staff go to store to buy disposable cups for beverages except for individual juices and milks. Staff is having trouble understanding only single-service utensils may be used for patients if washable utensils are not getting sanitized. PIC states an order for a new dishmachine has been placed but so far they have not received it. If machine is actually washing utensils and rinsing them, those utensils shall be moved to 3-compartment sink for sanitizing - as demonstrated today. DO NOT USE WASHABLE UTENSILS (PLATES, CUPS, FLATWARE, BOWLS, SAUCERS, ETC.) IN THIS ESTABLISHMENT WITH A HIGHLY SUSCEPTIBLE POPULATION WITHOUT SANITIZING THEM FIRST. EHS will return in 3 days for a Verification Visit to check whether utensils are being sanitized after washing and rinsing.
4-601.11(A) - Can opener visibly soiled. Several plates, a couple of knives, few bows have not been cleaned thoroughly - CDI: moved to sink to be cleaned and sanitized again. Food contact surfaces shall be clean to sight and touch. |
