General Comments

One large pan of prepared taco meat was not needed today. It was going to be saved. It was 165 degrees F at the beginning of the cooling process. It was placed in the walk in freezer uncovered for the cooling process. After 30 minutes it was 130 degrees F. It was broken down into 2 shallower pans and will be stirred frequently. Once it reached 70 degrees with in the 2 hr cooling period, it will be covered and labeled for freezer storage until needed.
