3-501.14 - Pan of approximately a 2" layer of hot string beans covered with aluminum foil just put in refrigerator at 2:15 pm is 119-120f - CDI: aluminum foil cover lifted and pulled back away from pan. At 2:45 pm temp is 88-93f. According to cooling calculator, cooling rate is good (green). Hot foods that are above 135f may be at room temperature, cut when temperature drops to 135f, immediately begin active cooling process to make, not let, food cool down to 41f or below. Two-step process for approved cooling: Step 1) cool food from 135f down to 70f within 2 hours, then Step 2) continue to cool food from 70f down to 41f or below within 4 more hours to make a total of 6 hours. Most food will cool much faster than 6 hours. Hot foods shall be actively cooled. |

Approved methods or combinations of methods include but are not limited to: uncovered, thin layers (such as green beans), ice bath (for foods such as soups and stews), uncovered and divided into more than one pan, freezer, stirring frequently. |
