4-602.12 Cooking and Baking Equipment (C) Black bread molds, bread pans, cookie pans, and cookie molds contained old food debris today. The food contact surfaces of cooking and baking equipment shall be cleaned at least every 24 hours. PIC stated these items were not used today.
4-501.114 Quat sanitizer in spray bottle was 0 ppm today. Quat sanitizers shall be maintained at a concentration of 200 - 400 ppm or as specified under 7-204.11 of NC Food Code and as indicated by the manufacturer's use directions included in the labeling. Chemical was emptied and was refilled with quat sanitizer by PIC. (quat sanitizer concentration at 3 compartment sink was 300 ppm) |

Clean equipment and utensils and clean linens may become soiled when stored in areas that have not been cleaned and sanitized. PIC cleaned this items/areas during inspection. |

4-501.11 Good Repair and Proper Adjustment - Equipment (C) Cold holding prep unit is not working on one side; Foods are being cold held by use of ice under the pans. Hot holding unit is not working. Microwave is not working; inside is melted. Toaster oven is not working properly; most buttons are not in use. Handwashing sink in between reach in freezer and 3 compartment sink is leaking and when turned on, it sprays water, which could possibly deter handwashing. Splash guard in between handwashing sink and 3 compartment sink is not mounted to the wall; it is leaning up against the wall with screws coming out of the top. Handle on one bread cabinet is very loose; screws are coming out. Ice machine is leaking; water seen on shelving under ice machine and excess water is dripping into a bucket in front of the ice machine. All equipment shall be in good repair. Remove old equipment and items that are no longer in use (old ice machine, coolers, pans, etc.)
4-202.11 Food-Contact Surfaces - Cleanability (Pf) Black bread molds are torn, ripped, and are frayed; which can be potential physical hazards in food. Two pans seen that are cracked and heavily stained. All food contact surfaces shall be free from breaks, heavy staining, cracks, chips, imperfections and shall be in good repair. |
