Raw shell eggs stored below raw hamburger in cooler drawer under grill. (PIC stated raw shell eggs were used for cakes and cooked to order on top of a burger.) Box of raw chicken on the floor in walk-in and in contact with heads of raw cabbage on the floor. Raw meats shall be stored below and adequately separated from raw produce. Raw animal foods shall be separated during storage, preparation, holding, and display to prevent contamination. Raw animal foods shall be stored according to final internal cooking temperatures. Shrimp and beef were both removed by PIC and discarded. Eggs were removed from cooler drawer and placed in walk in cooler. |

4-703.11 Chlorine dishmachine 0-10 ppm today. Chlorine dishmachine is not working properly and sanitizing dishes. Chlorine dishmachine shall sanitize dishes at 50-100 ppm. Use manual dishwashing method in 3 compartment sink of wash, rinse, and sanitize until dishmachine is repaired, or wash and rinse in dishmachine, and sanitize in 3-compartment sink. It is strongly suggested that utensils not be washed in dishmachine until it is delimed. PIC contacted Ecolab for repairs. |

Vegetable soup was date marked for 8 days; date of last serve or discard was yesterday. Chicken salad in prep unit did not bear a date. Sliced iceberg lettuce and sliced tomatoes in prep cooler did not have a date. (PIC state they are used 2-3 days; longer than 24 hours.) Three containers of cooked green beans in the walk in cooler did not bear a date. Nacho cheese in walk in cooler did not contain a date. All TCS subject to date marking shall be discarded if it exceeds the temperature and time combination specified in 3-501.17 except the time the product is frozen; is in the container or package that does not bear a date or day or is inappropriately marked with the date or day that exceeds the time and temperature combination as specified in 30501.17 (A) of NC Food Code. PIC discarded all food items that exceeded the 7 day hold time and did not bear a date. |
