4-202.11 Multiuse food contact surfaces shall be smooth, free of open seams, cracks, chips, pits, sharp internal angles, crevices and assembled to allow access to clean. -Pf Both fryer skimmers were torn and contained frayed wires. PIC removed utensils from service, discarded, and stated new ones have been ordered. Frayed wires may break off into grease, potentially becoming a physical hazard. |
