7-202.12 Concentration of chlorine sanitizer in sanitizer buckets was in excess of 400-500 ppm today. Chlorine sanitizer shall be at a concentration of 50-100 ppm. Buckets used to hold sanitizer were not filled completely to designated fill line of 2.5 gallons on bucket; one was only filled half way. Follow manufacturer's directions on sanitizer for mixing to ensure chlorine sanitizer is at designated concentration on packet, which is 100 ppm. PIC added more water to buckets to reduce concentration of chlorine sanitizer. |

6-305.11 Personal cell phone seen on top of equipment on main prep line. All personal belongings (phones, coats, etc.) shall be stored in areas to prevent contamination of clean equipment and utensils, food, and open single service. PIC asked employee to place phone in the office. |
