Items were prepped this morning, but inspection was following lunch rush. Temp range was taken at the beginning of the inspection (52) and at the end (48) prior to the report being written. REHS explained the importance of keeping lifttop lid closed when not in use to maintain temperature. There were a few items in the RIC (sausage (42), chili (43), and slaw (42)) that were above 41, but these items were also used during lunch and were cooling back down. The only item in the bottom of the lifttop unit was sweet tea.

Caution should be used to minimize food exposure. Floors and walls need heavily additional cleaning. 6-101.11/6-201.11 Floors, walls and ceilings shall be designed, constructed, and installed so they are smooth and easily cleanable. Floors shall be non-absorbent in areas subject to moisture. Holes in women's bathroom have been covered by duct tape. This is not an approved method of repair as it cannot be easily cleaned. Establishment shall patch holes properly.
