General CommentsDiscussed wash/rinse/sanitize according to posted and approved SOP. Next time, if procedure is explained incorrectly by owner, points will be deducted. Discussed moving biscuit oven off drainboard of utensil washing sink. There is an existing rolling cart the oven could be stored on and probably some other options if you are creative.
