3-501.15 Cooling Methods (Pf) Pans of cooked queso dip cooling in larger pans, surrounded by ice with lids on top of the queso dip. All foods that need to be cooled shall be done by a means that will reach time/temperature cooling parameters. Placing lids on top of foods during the cooling process does not allow heat to be released from food to reach time/temperature cooling parameters. Lids were removed from cheese dip and pans were placed in the walk in cooler to rapidly cool. |

Data plates on soda coolers indicate they are to be used for packaged products only. Raw seafood, queso cheese dips, and other TCS foods being stored in soda coolers in facility.
4-501.11 Maintain equipment in good repair. Remove tape from oven handle. Repair handle if needed. Repair or replace coolers under grill that are not in use. |
