Keep lid on cooler closed as much as possible. Some foods were taken to walk in freezer to rapidly cool.

Foods that need to be cooled shall be done by reaching 135 - 70 degrees F within 2 hours, then from 70-41 degrees F within 4 hours. Noodles were taken to walk in freezer to rapidly cool. Two deep pans of cooked chicken wings cooling in walk in cooler. Owner stated chicken wings were cooked around 1 pm. Educated owner on cooling foods in deep pans will not allow foods to cool equally and meet time/temperature parameters for cooling. Owner placed chicken wings on 2 sheet pans in a thin layer to continue cooling in walk in cooler.
