General CommentsNo vacuum breaker on can wash/service area faucet. However, end of hose is not in can wash. Install vacuum breaker, as needed. When reheating BBQ that loses temperature when chopping, use efficient methods that will reheat the BBQ to above 165f quickly. Small amounts will reheat quicker than large amounts. Stir frequently. A steamer will work well in this situation. Fingernails shall be trimmed and neat and short enough not to poke holes in gloves.

Two pans of mixed slaw put in top of lift-top by window and piled high in pan is: 54f at 10:00, 55-57f at 10:37, and 57-58f at 11:13 - one of the pans is almost empty after being dipped out of for service and the slaw left is in pan is 46f b/c at bottom of pan that is getting more air from refrigerator. Unsure if this would have cooled down to 41f within 4 hours b/c it was all sold before EHS had a chance to measure temps again. Larger round pan of mixed slaw in bottom of this same refrigerator is 54-56f. This is approximately the same temperature of the chopped slaw that was measured at 10:00'ish, but is sold quickly. VR Visit Required - 10 days. Find a way to cool slaw down to 41f or below prior to being served and within 4 hours. You can do any of the following or a mixture of the following methods: spread in thin layers and refrigerate, spread in thin layers and put in freezer, ice paddle, etc. Or, you can use Time As a Public Health Control (TPHC) for slaw.
