General CommentsBoth REHS and PIC's thermometers had their calibrations verified in ice water. REHS thoroughly sanitized their thermometer at the beginning and throughout the inspection. All hot holding is currently on Time as a Public Health Control.

Cut strawberries were found cooling with the lid on. CDI - PIC removed plastic and placed the cheese into a container with the lid vented to allow rapid cooling. Lid for the strawberries was vented. (A) Cooling shall be accomplished in accordance with the time and temperature criteria specified under 3-501.14 by using one or more of the following methods based on the type of FOOD being cooled: (1) Placing the FOOD in shallow pans; (2) Separating the FOOD into smaller or thinner portions; (3) Using rapid cooling EQUIPMENT; (4) Stirring the FOOD in a container placed in an ice water bath; (5) Using containers that facilitate heat transfer; (6) Adding ice as an ingredient; or

Facility could not locate their thermometer for measuring the temperature of the high temp dish machine. REHS verified that the dish machine was hot enough using their thermometer. CDI - PIC ordered a new one during the inspection. (B) In hot water mechanical WAREWASHING operations, an irreversible registering temperature indicator shall be provided and readily accessible for measuring the UTENSIL surface temperature.

Mop was moved to the top of the bucket during the inspection. Points maintained at half due to improvement.
