3-501.15 Cooling Methods- REPEAT
Cheese was found cooling in the walk in cooler tightly wrapped with plastic which inhibits cold air from reaching the product. Cut strawberries were found cooling with the lid on. CDI - PIC removed plastic and placed the cheese into a container with the lid vented to allow rapid cooling. Lid for the strawberries was vented.
(A) Cooling shall be accomplished in accordance with the time and temperature criteria specified under 3-501.14 by using one or more of the following methods based on the type of FOOD being cooled:
(1) Placing the FOOD in shallow pans;
(2) Separating the FOOD into smaller or thinner portions;
(3) Using rapid cooling EQUIPMENT;
(4) Stirring the FOOD in a container placed in an ice water bath;
(5) Using containers that facilitate heat transfer;
(6) Adding ice as an ingredient; or |

Box of paper plates was found stored on the floor in the dry storage. Relocate paper plates to be off the floor.
(A) Cleaned EQUIPMENT and UTENSILS, laundered LINENS, and SINGLE-SERVICE and SINGLE-USE ARTICLES shall be stored:
(1) In a clean, dry location;
(2) Where they are not exposed to splash, dust, or other contamination; and
(3) At least 6 inches above the floor.
(C) SINGLE-SERVICE and SINGLE-USE ARTICLES shall be stored as specified under (A) of this section and shall be kept in the original protective PACKAGE or stored by using other means that afford protection from contamination until used. |

4-302.13 Temperature Measuring Devices, Manual and Mechanical Warewashing.
Facility could not locate their thermometer for measuring the temperature of the high temp dish machine. REHS verified that the dish machine was hot enough using their thermometer. CDI - PIC ordered a new one during the inspection.
(B) In hot water mechanical WAREWASHING operations, an irreversible registering temperature indicator shall be provided and readily accessible for measuring the UTENSIL surface temperature. |

6-501.16 Drying Mops (C) - REPEAT
Mop found stored in the bottom of the mop bucket. Mop was moved to the top of the bucket during the inspection. Points maintained at half due to improvement.
After use, mops shall be placed in a position that allows them to air-dry without soiling walls, equipment, or supplies. |
