EHS observed the drink cups that are stored below the fountain drink dispenser have too many cups in there which had caused multiple cups to have the lip exposed to possible contamination. Cups may be stored here for customer use, but not so many that the lip of the cup is exposed to cause potential contamination. |

EHS observed a domestic chest freezer in the dry storage room that is not approved to be in the establishment. You must use commercial equipment that is ANSI approved.

EHS observed the top of the domestic freezer in the dry storage room is broken and will not fit properly on the freezer.
4-502.11(A) Maintain utensils in good repair.
EHS observed the ice scoop located by the ice machine in the dry storage room needs to be replaced due to a crack (roughly about 1 inch) running down from the tip towards the middle of the scoop. Due to the crack, the ice scoop can no longer be properly cleaned and needs to be replaced. EHS observed a knife of the magnetic storage board in the kitchen that the tip of the knife has been broken. This knife needs to be removed and replaced. |

EHS multiple pots and pans in the establishment that have large amounts of carbon build up on them. These items need to be cleaned or replaced.
4-601.11(C ) Keep non food contact surfaces of equipment clean to avoid build up of dust, food residue or debris.4-602.13 Non food contact surfaces of equipment shall be cleaned frequently to preclude accumulation of soil residues.
EHS observed the nozzles on the stove and grill top are covered in food debris and grease. The sides of the equipment including the fryer, flat top, tall hot hold unit, prep units and coolers need more frequent cleaning to prevent accumulation of residue. EHS observed the edge of the top on the prep unit had some microbial growth build up. EHS also observed the top/seal of the domestic freezer in the dry storage room has microbial growth all the way around the opening. EHS observed the cabinents underneath the fountain machine and the coffee area has visible debris from a liquid that has spilt underneath that needs to be cleaned up. |

EHS observed there is no drain plug in the dumpster. You must have a drain plug installed in your dumpster.
5-501.19 (C) Storage Areas, Redeeming Machines, Receptacles and Waste Handling Units, Location (C) - The location of receptacles and waste handling units for refuse, recyclables, and returnables may not create a public health hazard of nuisance or interfere with the cleaning of adjacent space.
EHS observed a 5 gallon bucket about half way full with used cooking oil that needs to be poured into the cooking oil receptacles.
5-501.11 An outdoor storage surface for refuse, recyclables, and returnables shall be constructed of nonabsorbent material.
EHS observed that both used cooking oil containers are on the grass and not on a nonabsorbent material like the dumpsters on are. The next time that the containers are dumped, please request that the containers be moved to the asphalt. |

6-501.12 Cleaning, Frequency and Restrictions (C) Physical facilities shall be cleaned as often as necessary to keep them clean.
EHS observed the floor underneath equipment in the facility needs more frequent cleaning including but not limited to the floors underneath the reach in cooler, reach in freezers, prep tables and units. EHS looked underneath the stand up reach in warmer and reach in cooler and observed a thick layer of food debris, grease, oil, utensils such as a fork and knife, egg shells and other items underneath. The walls throughout the facility also need more frequent cleaning and have noticeable oil and grease built up on them. EHS observed build up on the walls behind the 3 compartment sink and the hand wash sink by the front door of the kitchen.
6-201.11 Floors, Walls and Ceilings - Cleanability (C)
EHS observed a ceiling tile in the kitchen by the hood system is missing and needs to be replaced. EHS observed in the dry storage room, there is a large hole behind one of the shelving units that has a ceiling tile trying to cover up the hole. Floors, walls and ceilings must be smooth and easily cleanable. Please replace tiles and repair holes in walls.
6-501.16 Store mops for air drying after use.
EHS also observed several mops outside of the back door. Mops must be stored in their designated area such as the mop sink area in an area where it can air dry properly. |

EHS observed the hood above the stove and fryers needs to be cleaned more frequently. Build up is very visible and needs to be cleaned as to prevent a kitchen fire.

EHS observed the ceiling AC vents in the kitchen has build up of dust on them and need to be cleaned. With the AC running, dust and particles from the AC system have the potential to contaminate food and food surfaces in the kitchen. |
