General CommentsFacility utilizes TPHC for blanched french fries. Fries are blanched in groups of six baskets, and baskets are held at ambient temperature on a basket holder. Fries are used from top to bottom. The last basket out of the group of six dons a colored carabiner. Facility will then utilize a dry erase template to mark when the group of fries were placed on time organized by the color of the carabiners.
