3-501.15 Quickly cool foods. Use methods such as open/vented shallow pans, large ice baths and active stirring. Cold air must flow around product to remove the heat. -Pf Ranch in the cooler was initially 47F @ 10:39am. A second temperature of ranch was took at 11:23am holding at 43F. Ranch was cooling in a large closed sealed container allowing ranch to not cool quickly . Cantaloupe in the cooler was initially 45F at 10:39am, a second temperature was taken at 11:23 and cantaloupe was holding at 43F. Cantaloupe stored on a rack near the cooler door, door is being opened and closed allowing for heat alter cooling.
CDI: Regulatory authority recommended to take lid off or ranch and stir it to allow for cooling. Regulatory authority recommended cantaloupe be moved away from door to allow for proper cooling. |
