3-202.11 (A), (B), (C), (D) CNS employee documented a receiving temperature of 133F for cooked carrots and 132F for cooked apples. The food was documented at a final prep temp of 210F at the preparing facility at 6:15AM and the food was received at 8AM. The temperature was taken after the food was dropped off by the preparing facility. Per PIC the hot holding unit is not turned on until the food is dropped off. All TCS foods shall be received at 41F or below; or at 135F or greater except raw EGGS may be received at 45F or less. -P CDI, education. The food was observed to be 168F during the inspection. |
