General CommentsPIC stated baskets being brought to 3 vat utensil sink to be washed, rinsed and sanitized before serving another customer food. PIC demonstrated food safety knowledge. Restaurant has two food suppliers Ben E. Keith and Sysco both delivered on Wednesday. Menu, equipment layout, food service equipment, water, sewer, owner, phone numbers and emails verified during inspection. Good handwashing observed among food employees. Bleach sanitizer at 3rd vat utensil sink 100PPM. Bleach sanitizer in sanitizer bucket 100PPM. Employee health reporting requirements discussed. It is very important to review employee health reporting requirements with all food service employees often to prevent food borne illness. Homemade ranch dressing is considered TCS foods as milk is an ingredient. There forth ranch dressing must be held cold at 41F or less and date marked not to exceed 7 days in refrigerator. If PIC wants to use time as a public health control for a small amount of ranch dressing, written procedures need to be made in advance and followed. Observed condensation dripping from building gutter very near the entrance of the walk-in freezer. Recommend rerouting gutter water away from walk-in freezer entrance to prevent contamination.
