General CommentsDuring a visit to the establishment, it was discovered that a buffet and "action station" had been set up. The buffet is on an absorbent floor, food is not being protected by a sneeze guard, and eggs are being cooked without a hood system. During further questioning, EHS was informed that the smoke alarm had been set off on the morning of 1/21/25. This may have been due to grease laden vapor emissions. The establishment permit states: The PERMIT HOLDER shall obtain prior written approval from the REGULATORY AUTHORITY before the addition of customer self-service food or addition of buffet style dining To avoid permit action: 1) Buffets may not be used by the general public or other guests staying at the hotel. It can be used by PRIVATE PARTY MEMBERS ONLY 2) All food shall be discarded after the service. 3) Food shall be placed on 4-hour TPHC. (Policy was provided by EHS) 4) To avoid a fire hazard from grease laden vapors, NO COOKING SHALL BE CONDUCTED Other notes from the inspection: Chief stated that Wagyu Sliders and Salmon are always fully cooked. If offered as undercooked, consumer advisory asterisks shall be added to the menu. Establishment must also provide records from supplier to guarantee fish served raw or undercooked is free of live parasites.
