Food shall be marked to indicate the time that is 4 hours past the point in time when the food is removed from temperature control. Pf Establishment uses TPHC for pizza slices. Some pizza slices were missing TPHC start time. CDI - PIC knew pizzas came out 30 minutes ago so he marked that time on the pizza boxes.
