General CommentsEHS observed no SOP for utilizing ware washing three compartment sink during inspection. Facility is required to use three compartment sink as a dump sink according to permit and shall maintain an SOP for that process. PIC asked if the under counter hand sink could be used as a dump sink, as it is difficult to accomplish proper hand washing under the counter. Facility has adjacent hand sink a few feet from under counter hand sink that is easily accessible. EHS will obtain more information on this matter but has instructed facility to maintain sink as a hand sink until a determination can be made.
