General CommentsObserved facility cooling rice. Facility not permitted to cool any food due to permit conditions. Further violation will result in permit action. PIC stated that facility is losing a lot of product due to discarding after 4 hours. Discussed with PIC use of TPHC and if it was absolutely necessary to hold items in steam box and steam well on time. EHS explained that TPHC is not necessary if items will maintain temperatures in steam box and hot wells. PIC stated she will monitor temperatures of items in those units for the next couple of days, especially during busy hours to ensure that temperatures are maintained, and if they are facility will not continue TPHC for steam well and steam box but will continue to use TPHC for items on line. EHS explained to PIC that if change is made, it’s important to ensure that all staff is trained on appropriate procedures. EHS provided handwashing signs in English and Spanish for handwashing sink at dishpit as sign was severely faded.
