General CommentsInspection completed at Kangaroo Express at 4900 N Tryon St EHS observed a makeshift water tank that had been strapped on to exterior of MFU. When EHS asked PIC the purpose of the water tank, PIC stated it was extra water for cleaning the floors. PIC also stated that the reason the barbacoa meat was above temperature was because it was brought over today. ITS being issued today for failure to report to commissary and for adding additional unapproved equipment. Per permit conditions, The MOBILE FOOD UNIT/PUSHCART will report to the COMMISSARY for the purpose of food preparation where applicable; restocking supplies; servicing and required cleaning each day the unit operates.
