General CommentsDuring visit today, it was brought to attention that equipment had been removed from kitchen and additional equipment has been installed without prior approval. An updated site plan and manufacturer specifications sheets for equipment shall be submitted at this time. Equipment shall not be used until proper documentation has been submitted to health department and equipment has been approved. Any questions please contact me at dhester@bladenco.org

Deli meat temping above 41°F, see temperature observations. During discussion with PIC, deli meat was sliced this morning (less than an hour) and placed on opened cold case instead of placing in walk-in cooler to properly cool to 41° F before placing product on display case. CDI-PIC removed items and placed in walk-in freezer to cool.
