3-501.16(A)(2) Maintain TCS foods in cold holding at 41F or less. -P
Observed one pan of cooked ground beef temping above 41F (see temp chart) stored inside the standing reach-in cooler. PIC stated this was not taken out of refrigeration at all today.
CDI: PIC voluntarily discarded the TCS food item.
REPEAT VIOLATION.
*Note: Although a repeat violation, only one TCS food item was observed out of temp during today's inspection. Facility is also taking preventative measures for cold holding, conducting multiple temperature checks daily that they keep track of via whiteboard on their standing cold holding unit.

3-501.18 Discard the food requiring date labels once time/temperature window has expired, if it has not been labeled, or if the label is incorrect. -P The PIC should train and assign staff to monitor date marking to prevent the use of food products that are no longer in compliance with 3-501.17 (A), (B), or (C)
Observed a pan of house-made pimiento cheese date-marked with a prep date of 12/10, stored in the lowboy of the make table. PIC stated that was the correct date of prep, but this is a food item they batch-prep and freeze and thaw before serving. PIC stated this was pulled out to thaw yesterday and must have forgotten to mark it with the thaw date.
CDI: PIC created second date sticker to indicate the "clock start" date.
Observed a single grilled chicken stored in a food-grade bag date-marked with a prep date of 11/12, stored inside the lowboy of the make table. Food employee stated this is incorrect and was made on 12/11, and must have accidentally written the wrong date. EHS observed all other bags of grilled chicken were within the 7-day window.
CDI: PIC voluntarily discarded the TCS food item, since the grilled chicken had surpassed the 7-day window.
Observed an opened jug of milk date marked with two different dates (hand-written 12/17 and sticker stating 12/18). PIC stated they opened this on 12/17, and was unsure of why there was a second date sticker with a different date.
CDI: PIC removed the date sticker of 12/18, as PIC confirmed it was opened on 12/17.
EHS reviewed date-marking rules with PIC and different methods to make date-marking system easy and feasible for all employees to follow.
