4-603.13 Soiled items to be cleaned in a warewashing machine shall be loaded into racks in a position that exposes the items to the unobstructed spray from all cycles and allows the items to drain. Dishes were over crowded and stacked in the dish machine in a manner that obstructed the spray.

The dish machine is not operating according to the data plate. The final rinse temperature is not reaching 180F as required. A thermalabel strip was used any the water temperature is not reaching 160F. The dish machine is not sanitizing.
Use the three compartment sink to sanitize dishes until the dish machine is fixed. Dishes that were previously washed were sanitized in the three compartment sink during the inspection.
