3-501.16 Observed the potato wedges, chicken sandwich’s , buffalo bites, and cheese sticks holding between 115 and 123F on the quick bites line. Maintain TCS foods in hot holding at 135F or above. P Correction : Items were placed on temporary time as they will be used within the hour. PIC wishes to keep them on temperature instead of permanently moving to time and will continue to move them between the service line and hot box. |

4-501.12 Observed several cutting boards with deep grooves. They will be resurfaced/ replaced at the next of this school year. Cutting blocks and boards subject to scratching and scoring shall be resurfaced if they can no longer be effectively cleaned and sanitized shall be discarded. |
