General Comments

PIC cooks lunch right after breakfast around 730. There was no cooking going on during today’s inspection. EHS has gone 3 separate time periods during the last 3 inspections to observe cooking. Since EH has not witnessed cooking, EHS spoke with PIC about cooking temperatures and cooling temperatures. All items are cooked to 165F+. Items if cooled down for the next day are taken off the line by 1pm and reach 70F by 2pm in the cooler. Salads were made at 8:30.
