General Comments

The two compartment preparation sink is not easily cleanable due to its design. The square corners inside the vat and divider, along with the riveted and square-cornered attached drainboard are not easily cleanable. Foodservice equipment shall meet sanitation standards for design and cleanability. 4-205.10 Except for toasters, mixers, microwave ovens, water heaters, and hoods, food equipment shall be used in accordance with the manufacturer’s intended use and certified or classified for sanitation by an ANSI-accredited certification program. The handsink in the dish work room has a faucet that is just barely over 1.5” of hanging clearance from the flood rim. Recommend replacing the faucet handle with one with more height.
